Pollo a la secretaria de Alcalá la Real

The chicken well sautéed with a tomato sauce, peas, asparagus and a hair of saffron. The recipe says that it was born of a culinary improvisation of the woman of Alcade, the secretary when one day had guests and offered them a paella.
When he had everything ready he realized that he had no rice and chose to serve the meat and the chicken sautéed with a sauce of tomatoes, peas, asparagus and a hair of saffron. And so the secretary was born.



  • 1 chicken and chicken liver
  • ½ kg onion
  • ½ kg of tomato
  •  ¼ kg green peppers
  • 6 cloves garlic
  • Thread Saffron
  •  200 grs. Of serrano ham
  • White wine
  • Parsley
  •  1 can of peas
  • 1 can of bell peppers
  • Salt and ground black pepper
  • Olive oil


The chicken is chopped. In the frying pan fry some of the ham made into pieces and the whole garlic. Once fried they are taken out on a plate. In the same pan fry the chicken with the rest of the ham, salt and a sprinkle of white wine. Golden the chicken is passed into a saucepan. Then fry the pepper, onion and tomatoes with a little parsley.

You pass through the pasapurés the garlic, the ham, the pepper, the onion, the sofrito tomato, the saffron in thread, the fried asadura and the ground pepper. This sauce is poured into the pan with the chicken and it gives a boil. At the end add the peas and the red pepper to strips.
